Symmetrical result for flexible blades
This perfectly balanced, patented device enables stable grinding of knives with long and flexible blades, such as fillet knives. With the wide centering jig for knives KJ-140 you can achieve a symmetrical grinding angle on both sides of the blade. The blade is centered in the jig regardless of thickness and geometry, and you get the same result on both cutting edges of the knife. The longer clamp stabilizes flexible blades and prevents them from bending. This ensures the same angle and pressure over the entire cutting bevel.

Symmetrical grinding through effective centering
When you insert a knife into the wide centering jig for knives KJ-140, the knife is automatically centered in the jig regardless of thickness and geometry. This ensures effective centering of all knife thicknesses up to 10 mm, for conical knives 6 mm. This also centers blades that are thinner from the back to the cutting edge, and both cutting bevels of the knife are ground symmetrically. Easy adjustment, flawless result.
Freely movable, reliable hold
Since the wide centering jig for KJ-140 knives rests freely with the fence on the Universal Support, you can follow the shape of the knife and still rely on the reliable hold provided by the Universal Support. This means that a wide variety of shapes, such as filleting knives, butcher knives and classic chef's knives, can all be sharpened equally perfectly .
Perfect balance and ergonomics
User-friendly handling played a key role in the construction and design of the wide centering jig for knives KJ-140 . For optimum grinding performance, the fixture's center of gravity is on the clamps - the part, closest to the actual grinding process. As a result, grinding itself is perceived as extremely well balanced.
The fence end has also been designed to be particularly ergonomic. Here is a flat surface to place the thumb, so you can press the device without effort to the universal support. A minor detail, perhaps - but one that makes longer grinding much more pleasant.
Wider clamp for more stability
The KJ-140 wide centering jig for knives works the same as the KJ-45 centering jig, but has a wider clamp. The larger clamp width of 140 mm stabilizes thin blades and enables an even cutting bevel over the entire blade length due to the firmer
hold. Of course, it is equally well suited for larger knives with firmer blades, such as chef's knives. Please note, that the wide centering jig for knives KJ-140 cannot be combined with the holder for small knives SVM-00 - in this case the centering jig for knives KJ-45 must be used instead.
